Mix, Spread and Freeze!

This froyo snack will be on repeat as the temperatures come up and so do the demands for ice cream. Not to mention, it doubles as an activity for the kids. Win! Lay out the toppings and let them decide how they decorate their own bark. Because admittedly, we are all running out of ideas to keep these little ones preoccupied these days…

High in protein, low in sugar – in our books, makes the perfect summer snack.
Make sure you use plain greek yoghurt for this recipe (we love this one), as flavoured yoghurts tend to have a lot of sneaky sugar added to them.

This recipe is super versatile – perfect for fussy eaters or for getting them to try new foods!
Want a chocolate version? Add a tablespoon of cacao powder to the yoghurt.
You could even swirl in some chia seed jam or fruit puree for a berry swirl bark – yum!

Nutritious topping ideas:

  • Dried blueberries or cranberries (we used these)
  • Toasted coconut
  • Seeds or nut – chopped almonds, walnuts, pistachios and macadamias are delicious here
  • Raw cacao nibs
  • Strawberries, raspberries, blueberries, boysenberries – any berry!
  • Chia seeds, hemp seeds
  • Drizzle of nut butter (we used Fix and Fogg’s Smooth PB)
  • Muesli

Protein Yoghurt Bark

Ingredients:

Method:

  1. Mix the yoghurt and protein powder until smooth
  2. Spread onto a tray lined with baking paper or a silicon sheet
  3. Top with nutritional extras
  4. Freeze for at least 2 hours
  5. Break up into chunks
  6. Devour or keep in freezer
